Food Production Supervisor - Corrections - Oklahoma County Detention Center

The Food Production Supervisor supervises inmate workers to ensure that meal and food items are prepared in accordance with production plans. Trains workers in methods of performing duties and assigns/coordinates work to promote efficiency of operations, along with sanitation of the facility and maintaining personal safety.  May requisition supplies and equipment to maintain inventory levels.  Essential functions and responsibilities of the position may vary by Aramark location based on client requirements and business needs. 

 

Essential Functions: 

  • Conducts and/or attends daily shift huddles to communicate daily operational priorities, safety and security briefs
  • Supports daily schedules (if applicable), work areas, and assignments for inmates and/or Aramark food service workers and cooks
  • Supervises preparation and serving of meals while ensuring proper portion and special dietary requirements
  • Trains and guides inmates and staff on job duties, proper food safety and sanitation procedures, cooking methods, etc.
  • Oversees the completion of tasks
  • Reviews monthly menu, conducts inventory, and ensures that the appropriate product is ordered
  • Adheres to security procedures to facilitate the safety of yourself and others including ensuring that all kitchen tools and equipment are returned to their designated secure area
  • Maintains excellent customer service and positive attitude towards customers, clients, and co-workers
  • Instills and monitors clean as you go culture with all assigned workers
  • Adheres to Aramark safety policies and procedures including proper food safety and sanitation
  • Completes production paperwork and/or sanitation paperwork essential to be in compliance with Aramark and facility procedures
  • Ensures security of company assets
  • Communicates skillfully both written and verbally
  • Other duties and tasks as assigned by manager

Qualifications

  • Minimum of one (1) year of food prep or related work preferred
  • Previous supervisory experience preferred
  • Previous experience interacting with inmates a plus
  • Ability to motivate and supervise inmates and/or team members to attain quality and quantity of food production in a correctional work environment
  • Must be able to obtain a food safety certification
  • Ability to work independently with limited supervision
  • Ability to exercise good judgment and tact
  • Must be able to follow basic safety procedures and policies
  • Requires occasional lifting, carrying, pushing, pulling up to 25 lbs
  • Must qualify for and maintain correctional facility security clearance

Grill Cook - 7725 Connect

The grill cook takes orders for grill food items, cooks and prepares the order, and gives the order to the customer. Providing quality service is essential to customer satisfaction.

 

Essential Functions:

  • Sets up and breaks down the grill station
  • Provides friendly and helpful customer service
  • Takes the customer's order and prepares the order according to recipe, keeping in mind additional customer specifications or dietary needs
  • Cooks items according to the specified cook times to ensure that they are safe for customer consumption
  • Uses the correct portions when cutting and serving items
  • Anticipates peak and non-peak service times; batch cooks food items accordingly
  • Responsible for the appearance of food when serving to customers
  • Restocks the station with condiments and food product as needed
  • Adheres to the weekly/monthly cleaning schedules by completing the assigned tasks
  • Cleans and sanitizes work areas, equipment, and utensils
  • Lifts food pans from warmer to the serving line
  • Operates and cleans grill station (flat-top grill, char grill, hood vents, fryers, etc.)
  • Safely operates a meat slicer and executes proper knife handling

 

Additional Job Functions:

  • Cross-trains at other stations at the location
  • Works in other areas or departments as needed
  • Completion of any task requested by a supervisor or member of the Aramark management team

 

Work Environment:  Mostly works in front-of-house.  Requires work in grill area with extreme heat conditions and frequent interaction with heated equipment, grease, and other at-risk conditions.  Involves repetitive motion; walking and/or standing for extended periods of time. Frequent lifting, pushing, and carrying.

Job Responsibilities:

  1. Package and seal medical products using but not limited to the following methods:
    • Clean and verify components for count, quantity, and revision.
    • Generate and affix labels to properly identify materials. 
    • Read and understand blue prints. 
    • Box and package product for shipment to sterilizer. 
    • Seal using Tyvek, Foil, or other suitable means.

    2. Assist in logs and records for productions including: 
    • Work Order and DHR completion 
    • Ensuring equipment is functioning and set properly for production per specs 
    • Minor PM’s (daily and weekly) and logs associated with PM activities 
    • Minor maintenance of equipment or fixtures and completing or verifying log books

    3. Perform Inventory control functions as listed below: 
    • Expedite outside vendors when needed. 
    • Work with Team Lead, Manager, Planners and Buyers to set priorities. 
    • Receive product into inventory through the computer system. 
    • Maintain a secure and organized area. 
    • Maintain and operate material handling equipment. 
    • Implement inventory control systems (i.e. Dock to Stock, Point of Use).

    3. Assist in the coordination of the production and of employees: 
    • Work with manager, supervisor and/or Team Lead to facilitate schedules and balance the work force based on available work force and priorities. 
    • First line of assisting with interaction and employee cooperation.

    4. Assist in the training of employees: 
    • Work with engineering and Q.C. to improve processes. 
    • Other related duties as assigned.

    5. Complete and understand documentation needed to comply with S.N.E. policies, Quality Manual and procedures including but not limited to: 
    • FDA, QSR and various domestic and international standards and regulations. 
    • Company policies and procedures. 
    • Labor transactions and bar code scanning.

    6. Work in a team environment using the following skills:
